In bowl 1 combine the coffee and 1/4 cup of bushwacker spirit (set aside).
In bowl 2 add the heavy cream and powdered sugar and whip with either an eclectic mixer or whisk by hand till fluffy.
In a third bowl mix the cheese, vanilla and 2 TBS of Bushwacker, stir with a spoon or spatula.
Add the cheese mixture to the whipped cream, and whisk till peaks.
Cut your lady fingers in half and dip in the coffee (soak 2 seconds), then place two halves at the bottom of the glass, now add 2-3 TBS of the cheese mixture, sprinkle some cacao, and repeat, 2-3 layers.
Cover with wrap and place in the fridge for up to 2 hours.
When you are ready to serve, garnish with half of a dry lady finger and sprinkle with some more cacao.
